I don't know how many times I have made this cake but it's one that I don't think I will ever get sick of. Whenever my Mum asks me to make her a cake for a work morning tea this is my go to cake.
Ingredients:
190g unsalted butter
2/3 cup brown sugar
2/3 cup sugar
3 eggs, separated
4 TBSP honey
1 tsp baking soda
½ tsp fresh nutmeg
1 tsp cinnamon
¼ tsp ground cloves
¼ tsp salt
1 cup buttermilk
(If you don’t have
buttermilk, Fill 1 cup with milk to just below full and add 1 TBSP of vinegar
and leave for 5 mins)
2 cups cake flour
Method
- In a large bowl, cream together butter (If using straight from the refridgerator I alway soften my butter in the microwave for about 30secs) and sugars for about 3 minutes.
190g Butter partially melted, 2/3 cup of Brown Sugar and 2/3 cup of Caster Sugar
Butter and Sugar mixture combined - Add honey and beat another minute.
- Add eggs
yolks, one at a time, scraping down the bowl after each addition.
I usually go ahead and put the whites into a bowl that I can beat them in later.
Separated Eggs - In a separate bowl, using a fork mix together
flour, salt, baking soda, and spices.

Dry Ingredients after being mixed with a fork - If you don't have buttermilk (Which I never have) I combine together regular milk and vinegar.
Milk just less of being 1 cup and 1 TBSP of white vinegar. Let stand for 5mins before moving onto the next step. - Alternating, add 1/3 of dry
ingredients into the wet mixture, followed by ½ of the buttermilk. Add
another 1/3 of the dry ingredients, the last of the buttermilk and then
the last 1/3 of the dry ingredients.
Adding in the Dry Ingredients and Milk into the Butter and Sugar Mixture Mixture after Dry Ingredients and Milk have been added - Clean off your beaters (lets be honest I licked them first). Beat your egg whites to stiff peaks.

The Final Mixture - Pour into a greased and floured 22cm cake pan (I like to use a silicon cake mould, I still spray the bottom with canola oil).
